Smoky Shiitake Adlai Bowl

Nutty adlai, smoky shiitake, a little soy. This bowl is simple, filling, and honestly just really good.

Instructions

  1. Cook the Adlai

    Combine the adlai and water in a pot. Bring to a boil, reduce to a simmer, cover and cook for 25 to 30 minutes until tender. Season lightly with salt.

  2. Sear the Shiitake

    Heat oil in a wide pan over high heat until almost smoking. Add the mushrooms in a single layer. Don't stir right away. Let them sear undisturbed until golden and slightly charred at the edges.

  3. Add Garlic and Season

    Add the minced garlic to the pan and toss for about 1 minute. Deglaze with soy sauce and a drizzle of sesame oil. Toss to coat.

  4. Mix and Serve

    Add the cooked adlai directly into the pan and toss everything together so the grains soak up all the sauce and smoky flavor. Plate into a bowl, then top with black sesame seeds and fresh chives. Serve warm.

Chef's Notes

Sear the mushrooms first before adding garlic. Garlic burns fast and also releases moisture that will steam the mushrooms instead of searing them. Let the shiitake get golden and charred first, then garlic goes in for just a minute. That is what gives this dish its smoky depth.
