How to Cook
Simple to cook. Hard to mess up.
Stovetop
Rinse
Rinse 1 cup of Adlai under cold running water until the water runs clear. This removes excess starch for a cleaner, fluffier result.
Combine
Add rinsed Adlai to a pot with 2–2.5 cups of water. Use less water for a firmer, rice-like bite, and more for a creamier, risotto-style texture.
Simmer
Bring to a boil over medium-high heat, then reduce to low. Cover and let it simmer for 20–30 minutes until the water is fully absorbed. Don't lift the lid too early.
Fluff and Serve:
Remove from heat and let it rest for 5 minutes. Fluff with a fork and serve. Adlai holds its shape beautifully which is great hot or at room temperature.
Rice Cooker
Rinse
Rinse 1 cup of Adlai under cold water until clear.
Add to Cooker
Add Adlai and 2–2.5 cups of water to your rice cooker. Same ratio as regular rice — you can't really go wrong.
Cook and Serve
Run the white rice cycle. Once it switches to warm, let it sit for 5 minutes before opening. Fluff with a fork and serve.

- Stovetop: 1 cup Adlai → 2–3 cups water. Simmer 20–30 minutes.
- Rice cooker: Use a 2–3:1 water-to-grain ratio.
After cooking, you can let the adlai cool to room temperature or even store it in the fridge. This gives the adlai a firmer texture suitable for stir fries and grain bowls.
